The biggest enemy after water damage is mold and mildew! Ask how to remove the mold and mildew, and how to prevent its development. How serious is the water damage structural members such as wall studs, floor joists, etc.
And will remove all the drywall ceiling and replace it once the rooms are dry; Ask your insurance company to the extent they cover, and what discount you are responsible for?

There are many factors to consider, first, as mentioned, is mold / mildew. I would like to know how many of the walls with insulation got wet.
If the insulation gets wet there is virtually no way to dry the interior wall and is a perfect place for mold / mildew and rot. Ensure the contractor are: license, bonded, insured, has mold / mildew remediation credentials and make sure all subcontractors are insured as well.
The important thing is: do not rush the process as uncomfortable as it may be that no floor, allowing the time home to dry. On the air conditioner will help pull much moisture out of the house, be sure to change the filters often because they will clog more with all meals, etc. In fact, it would be a bad idea to understand through a filter during the air return grill as a pre-filter to catch a lot of that dust.
There is insulation between the floors and did the wet? I’ve seen times where they soaked in the exterior walls will reduce the sheetrock up to 4 to remove the insulation and allow walls to dry.
After it is dried, then spray all the walls, floors, everywhere that got wet with bleach, JoeMax, or a way to kill any mold / mildew.
Some states have passed legislation restricting the removal of areas that could be contaminated mold, so as not to spread the mold spores in the A / C system, so check that out. Fate.
